Cooking Favorite Zoodle Recipes With My Teenager
“Mom, can we go to the store and buy some zucchini, so I can make some zoodles for lunch?” Never thought I would hear that from my teenager. What a pleasant surprise!
We shifted from rice noodle pasta to zoodles just recently with a lot of, “Really mom, zoodles? We want noodles.” When I plated up the Bacon zoodles and gave it to them I got some looks, but I have to say during dinner it was quiet, and they finished those zoodles and went back for more! We’ve since had zoodles and meatballs and both kids went back for seconds.
This is the zoodler we use.
You have the option of thin or thick zoodles. We usually do thin. This time we did a bit of both.
We want to share some of our favorite Zoodle recipes below.
Bacon Zoodle Recipe
1 lb nitrate free bacon, chopped into small pieces
2-3 C. cherry tomatoes
3-4 cloves garlic, minced
1 medium onion, diced
2-5 fresh basil leaves, chopped
Sea salt to taste
Pepper to taste
Red chili pepper flakes to taste
Pine nuts, toasted
3-4 zucchini, zoodled
Saute bacon until crispy, remove bacon and set aside. Remove most of the bacon grease, leaving some in pan to saute veggies. Add diced onions and cook until translucent, add garlic and tomatoes. Cook until tomatoes start to wilt. Add salt, pepper, red chili pepper flakes, bacon and basil.
Saute zoodles in a seperate pan while making the bacon mixture. Saute zoodles in some butter or leftover bacon grease adding a touch of sea salt and pepper. Cook for approx. 3-5 minutes.
Add bacon mixture to zoodles, toss to mix it in. Put the zoodles on your plates, and sprinkle pine nuts and parmesan on top! Enjoy!
Meatballs and zoodle recipe
1lb ground spicy pork sausage
1lb ground beef
2 eggs
1 C gluten-free panko or GF breadcrumbs or almond meal
1/2 C parmesan
1 T italian seasoning
1/2-1 tsp sea salt
1/2 tsp pepper
4-5 zucchini, zoodled
Mix together with hands until fully incorporated. Make meatballs to your size preference. Place meatballs in medium pan and cook turning to brown all sides. Add your favorite sauce. Cook until meatballs are fully cooked through approx. 10-15min.
While they’re cooking saute zoodles with butter or avocado oil. Cook approx. 3-5min. Plate zoodles and top with sauce and meatballs. Enjoy!
