Grain free Pumpkin Coffee Cake
This grain free pumpkin coffee cake is delicious. It’s not only grain free but refined sugar free too! I’ve adapted my recipe from Jay’s Baking Me Crazy, Paleo Pumpkin Coffee Cake’s recipe.
Grain free Pumpkin Coffee Cake
Cake ingredients
Preheat oven 325
1/4 C grass-fed butter (melted)
1/4 C maple syrup
1/4 C coconut sugar
1 C pumpkin
3 eggs
1 C blanched almond flour
1/4 C cassava flour
1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp sea salt
Topping
1/4 C cassava flour
1/2 C blanched almond flour
2 T coconut sugar
1/2 tsp cinnamon
2 T maple syrup
2 T grass-fed butter (cut in small pieces)
Line 8×8 or 9×9 baking dish with parchment paper
Make topping first; in a small bowl mix cassava flour, almond flour, coconut sugar, cinnamon, maple syrup, and cut in butter with a pastry knife or 2 knives. Set aside.
In large bowl, mix butter, maple syrup, coconut sugar, and pumpkin, mix well. Add eggs and mix.
Add almond flour, cassava flour, baking soda, pumpkin pie spice, cinnamon, and sea salt. Mix well. Pour into prepared baking dish and top with topping.
Bake 45-50min
Store in fridge
