These grain free yummy bars are a great snack or dessert. We love eating them and they rarely last more then a day or two. These are slightly adapted from the recipe on www.cookwithmanali.com.
Grain free yummy bars
1 C. Almond meal
1/4 tsp. sea salt
1/2 tsp. baking powder
1/2 C. almond butter
1/4 C. raw honey
1/4 C. unsweetened applesauce
1/2 C. pecans, chopped
1/2 C. chocolate chips
2 T. Flaxseeds or hemp hearts
1/3 C. Unsweetened coconut
Other optional add-ins: dried fruit, chia seeds, other nuts and nut or seed butters
Preheat oven 350
Line 8×8 baking pan with parchment paper
Mix almond butter, honey, sea salt and applesauce in a bowl
Add almond meal, baking powder, pecans, flax seeds, 1/4 C chocolate chips to wet mixture until fully incorporated.
Pour mixture into 8×8 pan, it can be sticky so use a spatula to spread it out.
Sprinkle remaining 1/4 C chocolate chips and coconut on top and lightly press chocolate chips int with spoon or your fingers.
Bake 20-25 minutes, till edges are golden brown and the coconut is lightly toasted.
Cool and enjoy!
Store in a airtight container for 5 days.
